Ingredients
For the salad: makes 1 serving
- Many handfuls of arugula
- 1/2 honey crisp apple, chopped
- 1/4 cup red onion, finely diced
- 5 medjool dates, chopped
- 1/4 cup pistachios, chopped
- 1/4 cup pomegranate seeds
- 1/4 cup feta
For the dressing: makes 4-5 servings
- 1/2 cup olive oil
- 1 Tbsp Dijon mustard
- 1/2 Tbsp honey (give or take)
- 1/2 tsp salt
- Pepper

Instructions
Add all salad ingredients to a bowl. Toss with dressing, starting light and adding more to taste. Top with roasted chicken to make this a complete meal.
Natalie’s Notes
I love a salad that is easy to make a single serving at a time! I didn’t use honey in my dressing and it was still yummy. This would be a good salad to bring to a dinner party because all the colors pop and it doesn’t have any controversial ingredients like olives.
