Ingredients
- 2 lbs cooked chicken breasts, or 1 rotisserie chicken
- 1/2 cup shredded carrots
- 1/2 cup minced celery
- 1/2 red onion, minced
- 1/2 cup chopped banana peppers
- 1/2 cup plain Greek togurt
- 1/2 cup cottage cheese
- 2 Tbsp mayo
- 1/3 cup buffalo sauce (Primal Kitchen)
- 1 Tbsp ranch seasoning
- Salt and pepper to taste
Directions
- Roughly quarter chicken breasts and place in a stand mixer fitted with a whisk or paddle attachment. Mix on medium-high until shredded to desired consistency.
- Place all other ingredients in the bowl with the shredded chicken. Mix until combined.
- Taste and adjust seasonings and wet ingredients. Enjoy!

Made December 28, 2025. So easy to shred chicken in a stand mixture! I marinated the chicken breasts with my standard lemon juice, garlic powder (or fresh garlic), olive oil, salt, and pepper, then added a dash of ranch seasoning too. I did not have banana peppers so used dill pickles, and I did not have enough buffalo sauce so increased the other wet ingredients. You can make any variation of chicken salad with this method!
