Buffalo Chicken Salad

Ingredients

  • 2 lbs cooked chicken breasts, or 1 rotisserie chicken
  • 1/2 cup shredded carrots
  • 1/2 cup minced celery
  • 1/2 red onion, minced
  • 1/2 cup chopped banana peppers
  • 1/2 cup plain Greek togurt
  • 1/2 cup cottage cheese
  • 2 Tbsp mayo
  • 1/3 cup buffalo sauce (Primal Kitchen)
  • 1 Tbsp ranch seasoning
  • Salt and pepper to taste

Directions

  1. Roughly quarter chicken breasts and place in a stand mixer fitted with a whisk or paddle attachment. Mix on medium-high until shredded to desired consistency.
  2. Place all other ingredients in the bowl with the shredded chicken. Mix until combined.
  3. Taste and adjust seasonings and wet ingredients. Enjoy!

Natalie’s Notes

Made December 28, 2025. So easy to shred chicken in a stand mixture! I marinated the chicken breasts with my standard lemon juice, garlic powder (or fresh garlic), olive oil, salt, and pepper, then added a dash of ranch seasoning too. I did not have banana peppers so used dill pickles, and I did not have enough buffalo sauce so increased the other wet ingredients. You can make any variation of chicken salad with this method!
