Cabbage Cole Slaw

Ingredients

  • 1 green cabbage head
  • 4 carrots
  • 1 cup Greek yogurt
  • Juice of 1 lemon
  • 1 tbsp white vinegar
  • 1 tsp honey
  • 2 tbsp yellow or white onion, grated
  • 1 tsp salt
  • Freshly ground pepper, to taste
  • Serve with pickle chips

Instructions

  1. Using a mandolin or knife, finely shred cabbage and carrots. Add to a big mixing bowl.
  2. In a separate small mixing bowl, combine Greek yogurt, lemon juice, white vinegar, and honey. Grate in the onion so you get the flavor of onion without any chunks. Add salt and pepper.
  3. Add dressing to the slaw, and mix until evenly coated. Serve with pickle chips on the side.

Natalie’s notes

Made 3/3/25. Good flavor, but I need a mandolin. Finely slicing the cabbage with a knife worked fine, but the finely chopped carrot wasn’t a good sub for shredded. Next time I’ll buy a bag of shredded carrots, or buy a mandolin. Kept well in the fridge!
