Ingredients
- 1 1/2 cups cooked chickpeas, drained and rinsed
- 2 Tbsp tahini
- 1 tsp Dijon mustard
- 1/2 garlic clove
- 1 tsp capers
- 1 green onion, chopped
- 2 Tbsp chopped cilantro
- 2 Tbsp fresh lemon juice
- Sea salt and freshly ground black pepper
Instructions
In a food processor, combine all ingredients. Pulse until combined, but do not puree. Season to taste.

Made October 20, 2025. So easy and flavorful! Next time i will double or even triple. Suggested serving was on a baguette sandwich with chopped green beans, sliced Kalamata olives, and thinly sliced red onion pressed on top of the chickpea salad, then mayo, sliced cucumbers, radishes, and basil on the other side.
