Crockpot Hawaiian BBQ Chicken

Ingredients

BBQ Chicken

  • 1 red onion, chopped
  • 3-4 garlic cloves, minced
  • 1.5 – 2 lbs chicken breasts or thights
  • 1 jar Primal Kitchen BBQ Sauce, Hawaiian Style or No Sugar Added

Pineapple Salsa

  • 1 small red onion, diced
  • 2 roma tomatoes, diced
  • 1.5 cups pineapple, diced
  • 1 jalapeño, minced
  • 1/4 cup parsley or cilantro, chopped
  • 1/2 avocado, diced
  • Juice from one lime
  • Salt and pepper, to taste

Instructions

  1. Add onion, garlic and barbecue sauce to the crock pot. Stir to combine.
  2. Add chicken and toss until the chicken is well coated. Cover and cook on low for 4-6 hours, or high for 2-3 hours.
  3. Meanwhile, prepare the salsa. Combine all ingredients in a large bowl.
  4. When the chicken is done, shred with two forks. It should shred easily, or it is not done yet.
  5. Serve in bowls over rice or quinoa and top with salsa.

Made 7/7/24. Easy weeknight meal. Top with more barbecue sauce if you want a lot of flavor.
