Ingredients
BBQ Chicken
- 1 red onion, chopped
- 3-4 garlic cloves, minced
- 1.5 – 2 lbs chicken breasts or thights
- 1 jar Primal Kitchen BBQ Sauce, Hawaiian Style or No Sugar Added
Pineapple Salsa
- 1 small red onion, diced
- 2 roma tomatoes, diced
- 1.5 cups pineapple, diced
- 1 jalapeño, minced
- 1/4 cup parsley or cilantro, chopped
- 1/2 avocado, diced
- Juice from one lime
- Salt and pepper, to taste

Instructions
- Add onion, garlic and barbecue sauce to the crock pot. Stir to combine.
- Add chicken and toss until the chicken is well coated. Cover and cook on low for 4-6 hours, or high for 2-3 hours.
- Meanwhile, prepare the salsa. Combine all ingredients in a large bowl.
- When the chicken is done, shred with two forks. It should shred easily, or it is not done yet.
- Serve in bowls over rice or quinoa and top with salsa.

Made 7/7/24. Easy weeknight meal. Top with more barbecue sauce if you want a lot of flavor.
