Lemon Dijon Chicken

Ingredients

  • 2 chicken breasts
  • Juice of 1 lemon
  • 2 Tbsp olive oil
  • 1 tsp Dijon mustard
  • 3 garlic cloves, grated
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp Kosher salt
  • 1/2 tsp black pepper

Directions

  1. Place chicken breasts in a Ziploc gallon freezer bag. Seal tightly. Using a mallet, tenderize for consistent thickness so it cooks evenly.
  2. Open the bag and add your lemon juice, oil, mustard, garlic, and seasonings. Seal tightly again, and massage the marinade into the chicken until both breasts are evenly coated.
  3. Store in the fridge overnight, or use immediately.

How to Cook Chicken 101. When I’m in a pinch and don’t want to follow a recipe to make dinner, it’s this chicken and some zucchini, green beans, or asparagus and some rice. The marinade is acid, oil, garlic, salt, pepper. Then have fun with the seasonings!
