Peach “Proats” (Protein Oats)

Ingredients

  • 2 cups almond milk
  • 2 cups cottage cheese
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • Pinch of sea salt
  • 1/4 cup honey (optional)
  • 2 cups oats
  • 2 tbs chia seeds
  • 3 peaches

Instructions

  1. Add the almond milk, cottage cheese, vanilla, almond extract, sea salt and honey to a blender.
  2. Remove the pit from one of the peaches, roughly chop, and add to the blender.
  3. Blend on high for 1 minute until the mixture is completely smooth and pink.
  4. Transfer the mixture to a large bowl and mix in the oats and chia seeds.
  5. Cut the pit out of the remaining peaches and finely dice. You want the peach chunks to be reminiscent of those peach yogurts.
  6. Mix in the peach chunks and let the mixture sit for at least 30 minutes to thicken before putting into containers.
  7. Divide into 1 cup deli containers and store in the fridge.

Made 7/26/24. So delicious! Wouldn’t change a thing. The almond extract is a great touch.
