Sloppy Jane’s

Ingredients

For the sweet potatoes:

  • 4 medium-sized sweet potatoes
  • 2 tbsp avocado oil
  • 1/2 tsp kosher salt

For the Sloppy Jane mixture:

  • 2 tbsp avocado oil
  • 1 cup finely diced yellow onion (1/2 large onion)
  • 1 cup finely diced bell pepper (1 bell pepper)
  • 2 garlic cloves, minced
  • 1 lb ground beef
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 tsp chili powder
  • 2 tbsp tomato paste
  • 1 tbsp yellow mustard
  • 1/4 cup coconut aminos (sub soy sauce if not Whole30)

Instructions

  1. Preheat the oven to 400F.
  2. Scrub and pat dry the sweet potatoes and set on a baking sheet. Using a fork, piece each potato about 6 times all over.
  3. Drizzle the potatoes with oil and using your hands, rub the oil into the potatoes evenly. Sprinkle with salt.
  4. Transfer to the oven and bake until potatoes are tender, about 45 minutes.
  5. Meanwhile, make the Sloppy Jane mixture. Heat the oil in large skillet over medium-high heat. Add the onion, bell pepper, and garlic and cook, stirring, until tender, about 3 minutes.
  6. Add the ground beef and cook, breaking up the meat with the edge of a spatula until cooked through. Drain off excess fat and return to the skillet and reduce the heat to medium-low.
  7. Add the salt, pepper, chili powder, tomato paste, mustard and coconut aminos and stir until well combined and the meat is coated in the sauce. Remove from heat, cover and keep warm until the potatoes are ready.
  8. When the potatoes are done, remove from the oven and let cool enough to handle. Carve a slit at the top of each potato and using a fork, fluff the inside of the potato.
  9. Top with the Sloppy Jane mixture. Enjoy!

Made 09/15/24. The mixture is super savory and would be great to keep on hand! It’s very filling with the sweet potato, and I ended up taking out some of the potato after fluffing since it was a lot of food.
